  • I have travelled and I love to travel, often joining my professional interests with personal curiosity. I enjoy walking through the spice markets in large cities, where I seek new flavours to use in my dishes. Yet, in the face of such a desire to learn and experience “other” kitchens, I place myself firmly in the cultural heritage represented by my Apulian origin.

    A Puglia is a kind of bridge between the West and Asia. It’s the meeting point between cultures and cooking styles, which are able to merge into a single, marvellous Mediterranean context. Just as I have developed my skills, the region has become this magical, alluring corner of the world. Now, it will always bring forth a certain magic, flavour and aroma.
